Hey, What the Heck Happened to

Psst!   It’s OCTOBER FOLKS!  What? I am baffled and mortified that it’s been 3 months since a post.  Quite frankly I am still not ready…well I don’t think I am; the last few months are not a blur but a blank white piece of paper that has nothing to tell… Except we all have a story….

Our summer was busy…we all had additional responsibilities. Without getting into details, I can hopefully say that is behind me. Luckily and so deserving, we were able to manage a fun night at the beach! YAY!

We spent a lovely Friday Evening together at our town beach, had pizza, and enjoyed each other’s company!
Our friends and us are bonded forever; our children knew each other before we knew them, a connection that hopefully is unbreakable!

September was more eventful than the previous months with school beginning, and getting the kids acclimated to their schedule.  Oh, there was one more thing that happened …yes Nick & I celebrated our 29th Anniversary!

To honor our years together I went back into the past…picture two very young adults in a tiny four–room railroad apartment in Brooklyn.  Back then, I hardly cooked… (I knew how) but had better things to do!  Our dinners were take-out on some nights; many wonderful meals my mother-in-law cooked for us and gasp ….TV Dinners which we called microwavables!

September 14 2013 I made for my husband, Salisbury steak dinner; He was quite pleased and loved every bite.

Salisbury Steak Recipe

What you need for the Salisbury steak
2 ½ lbs. of chop meat (Sirloin-90% lean)
2/3 cup of breadcrumbs
1/3 cup of Ketchup
Less than a teaspoon of Dijon Mustard
A Few Sprinkles of Worcestershire Sauce
1 egg
Water less than ½ of cup
½ of small onion sliced and sautéed
Salt and Black Pepper to season the meat
Mix all the ingredients and form patties, I was able to get 6 nice size patties.
In a pan, lightly add olive oil to coat the bottom and two or three pats of butter.
Fry your patties on both sides to almost fully cooked. Remove from pan and set aside.
Once all patties are cooked, continue to make the gravy.

For The Gravy
One produce package of mushrooms any is fine; Baby Bella or White Mushrooms.
I used the White Sliced Mushrooms …hey it’s my anniversary too!
One sweet Onion Sliced
Beef Broth
Flour and Water
Dijon Mustard
Worcestershire Sauce
Olive Oil
Making the Gravy

Add a little more oil; add the sliced onions and season with a small pinch of sea salt and black pepper.
Add the mushrooms and lower heat- mushrooms are sponges so I generally don’t add salt at this point, you might need to add more oil and butter to the pan- (remember-sponges) as the onions and mushrooms are sauteing scrape all that goodness on the bottom of the pan. Once the onions and mushrooms are cooked I start adding the Dijon mustard ½ of a teaspoon,  3 or 4 sprinkles of Worcestershire sauce, 1 squirt of ketchup  mix it into the mushrooms and onions, then add two cups of beef broth.  Bring that to a simmer keeping the heat on low. Once all the flavors and ingredients have married, I add the flour and water mixture (slurry) this is what I do I use my Tupperware 2 cup measuring cup. I add 2 heaping Tablespoons of flour and less than ½ a cup of water, mix together with a fork then proceed to stream it into the beef broth.  With my fork, I continue to mix the gravy trying not to get any lumps. Season with a pinch of sea salt and black pepper, and then add the patties to the gravy. As the sauce simmers, it starts to thicken –simmer everything in the pan for about 5 or 10 minutes. Remove from heat and plate!

Salisbury steak was accompanied with steamed string beans and mashed potatoes!  I did not make brownies but did buy them, and brought it to my sister’s home to enjoy a beautiful September evening!
